Story
Viognier La Borie is a delicious Viognier. One that offers a nose full of stone fruit and specifically an intense apricot aroma, partnered with roses and Acacia. La Borie is well balanced on the palate with powerful flavours and a remarkable aromatic finish. Perfectly matched with food, it is ideal with dishes based around white meats as well as salads and fish.
The vines of La Borie Viognier are located on the sunny hillside areas facing north, near Ensérune (Languedoc-Roussillon). The soil, composed of white earth (calcareous sandy silts) helps preserve the acidity of the grapes and thus obtain well-balanced wines. The control of yields is ensured by the optimal management of nutrition and budding. Also, this wine is classified as vegan wine which means that the winemaking process is completely vegan friendly.
The vinication process starts with the alcoholic fermentation which is done in stainless steel vats and conducted in a temperature-controlled environment. It is then left for a static cold settling where the lees are left in the wine. It is aged for 4 months in stainless but with a small amount of battonage to accentuate the feeling of a fuller body on the palate.
