Story
The grapes for The Dreamer are harvested early for the high acidity and low alcohol. It is fermented at 14-16 degrees to enhance its aromatic potential and maintain its freshness. Fermentation is stopped to maintain a level of 7g/l residual sugar. Originating from the Northern part of the Rhone in France, Viognier displays extremely individual characteristics; dry, powerful and spicy with a hint of apricot. Our Dreamer Viognier was an early pick to ensure a higher natural acidity, this is balanced beautifully by retaining just the right amount of its natural sugars. In full, the Dreamer is off- dry, fun and fresh; slight hints of apricot oil, tangerine and rose petals make this wine the perfect pairing for a Summers day.
