Story
Carlo Damiani is a classic Pinot Grigio, starting with its pale straw yellow colour and excellent clarity. The wine has a delicate yet intense aroma of white flowers, particularly Acacia Flowers, almond and citric fruits, as well as exotic fruits and unripe apples. These aromas are all tasted on the palate giving the wine well rounded body with great balance of sweetness and acidity. Making this wine perfect for drinking with our without food, especially on a hot day.
Carlo Damiani Pinot Grigio, produced by Vini Fabiano, is produced by starting in early september with the picking if the grapes, ensuring there is a good level of acidity in the grapes,. The grapes are then pressed with a yield of no more than 62% of the grape juice. This keeps out the bitterness and keeps in the maximum flavour of the grapes potential. It is then cold fermented in stainless steel tanks for 20-25 days in order to maintain the natural flavours of the juice.
This wine is perfect for parties as it is best drunk without food yet holds its own against hors d’oeuvres and fish dishes; especially crab meat. It can also be drunk with a meal and goes great with soups and white meats. Serve chilled between 8-10 degrees.
