Story
Staffelter Hof Papa Panda Pet Nat 2019 has notes of jasmine and elderflower with some tropical papaya. The grapes for this wine come from two parcels – Kirchlay & Letterlay, both on a mixture and grey and blue slate. The grapes are a mixture of a couple of different harvest times to ensure the perfect balance of fruit and acidity.
The grapes were destemmed and underwent a short 12-hour maceration before being pressed. Wild fermentation kicked off in steel tanks. The fermentation was very slow in 2019 and so this wine was actually bottled in March 2020. This forms part of Jan’s ‘Pandamonium’ project which comes from bought fruit as opposed to estate-grown.
All of the fruit is always organically grown and selected with great care. In this case, the vineyards are on the grey slate on the slopes of the river, with a fantastic linear backbone of acidity. 10+ grams of residual sugar. Fermentation finished in bottle.

The estate was first found in documents that dated 862 AD. It has been in the current family however since 1805 when they bought it from Napoleon’s government. Quite a few of the oldest estates in the region began their journey in a similar fashion. Since then, the winery has been handed down from generation to generation of the same family. It was primarily a bulk wine production until the late 50’s when current winemaker Jan Klein’s grandfather took over the winemaking. Jan Mattias Klein took over from his father in 2005 as a winemaker (aged 28). He continued to make classic Rieslings for a few years but in 2010/2011 started to change his thinking towards the future of the winery, and generally the future of the planet.
