Story
The Wirewalker is made entirely with older oak to allow the fresh red cherry characteristic to shine, whilst adding a little bit of earthy spice ton the back palate. This gives the wine character and complexity. The grapes are harvested in the cool climate of the morning, which shortly after about 15% of selected parcels are kept to ferment. The remainder of the grapes were de-stemmed, sorted and placed in closed fermenters. Wild yeast carried out the primary ferment which were monitored and tasted daily. The juice was subject to an extended maceration for greater depth. The wine was then racked on oak for ageing.
