Story
The Chameleon Cabernet Sauvignon, Merlot from Jordan Wine Estate, named after the Cape Dwarf Chameleons that live in the winery willow trees, is aptly named – expressing the changing flavours of the component varieties of these 2 fruit-driven blends. The Chameleon Cabernet Sauvignon, Merlot (58% Cabernet Sauvignon, 29% Merlot and 13% Shiraz) is a perfect blend of the three grapes all performing their own roles with perfect execution. From proving the framework, filling the rich body to providing the jammy, sun-ripened plums & dark-skinned spring berries with a top note of herbal dried mint. Dishes associated with Alfresco dining, especially southern Italian cured pork, goats cheese and olive tart are a perfect food accompaniment. The grapes, from their North and North East facing slopes are harvested in February and March before being taken to the winery for a temperature controlled fermentation under the watchful eye of Sjaak Nelson and Gary Jordan. The grapes used gravity and a light pressing to keep the tannins in temper before fermentation where the grapes were subjected to three times daily pump overs! The various portions of the blend spent 16 months in 225 litre French oak barrels. Jordan Wine Estate sits in the distinct ravine which embodies Stellenbosch Kloof and harnesses all the qualities of a well-orientated compass. Varying elevations and aspects allow a selection of classic varieties to be grown in their specific requirements, with a range of aspects of the slopes to the altitude – all controlling sunlight and warmth that the vines get. This makes for a spectacular range of wines; bringing out the best of each individual wine that makes up The Jordan Estate range.
