Story
The Entre Vinyes Funambul Brut Nature is the baby of Maria and Pep who, in 2012, bought some old vineyards in the protected park of Foix, Penedes. Today, the run a successful and experimental winery. The cava gives a nose and palette of some yeast notes which you can accept from the traditional cava style but this is where the tradition ends. The wine is left as untouched as it can be, left to evolve and mature for 2 years on lees and turn into a drink that is a pleasure to drink. It is fruit forward and provices notes of apricot and stone fruit as well as apple all with a mineral note lingering on the end. The mousse is creamy and smooth.
The Funambul is a fresh, dry cava with exceptional body and flavour. The grapes for this Cava come from a particular vineyard translating as ‘The Witch’s Path’ where the soils are very poor. This leads to a very low yeald of grapes but the grapes that do appear are rich and concentrated in some exceptional potential and flavour.
Cava, like Champange, is made in the ‘traditional method’ where the second fermentation of the wine occurs in the bottle, resulting in a dry sparkling wine that also has a heavy yeast influence. the grapes are harvested young with high acidity learning themselves well towards the sparkling wine production method. Cava is therefore much more comparable to the dryer champagne style of sparkling wine rather than its Italian counterpart, Prosecco.
