Story
Cascadia Syrah is a dark concentrated Syrah and possesses flavours of dark fruits and blackberry as well as spicy notes – particularly of clove and white pepper which comes together in union to coat the palate with a plush round mouthfeel and leading to a silky-smooth finish. Cascadia is produced from a family-run single vineyard in the Yakima Valley AVA, below the Cascadia mountains. Here, the soils are basalt with loam and sand and all vines are trained to a single cordon. Due to the harsh soil conditions, forcing the grapes to form with concentrated flavour, the average cropping is just 4 tons per acre – so the grapes that are harvested are the best grapes the land can produced. The grapes are cold-soaked for 72 hours before then being heated up and inoculated with a Rhône style yeast strain. Extraction is fairly vigorous at first, giving the fermentation a delastage, followed by twice-daily pumpovers with air inclusion. Fermented dry in the skins, then gently pressed. After a short settling period, the wines were then sent to French oak barrels and inoculated for Malo-lactic fermentation. During MLF, the lees were stirred twice a month and topped. The wine is topped twice a month as well. Oak Treatment – 20% new French oak 40% 3-year-old French oak and 40% Neutral French oak. Currently aged for 14 months in barrels. This wine is best drunk with food and is perfect when served with a grilled steak, hearty stew or simple pasta dish.
